Sanriku, a coastline repeatedly eroded by the Pacific Ocean and slowly rebuilt after earthquakes, holds the most honest logic of Japanese cuisine: fishermen, hunters, artisans, and chefs, each guarding an almost obsessive craft. We don’t arrange whirlwind tours of famous restaurants; instead, we break down the itinerary to the deepest parts of the production areas. You’ll witness how dried sardines are condensed into the soul of a bowl of dashi broth in a single day, and you’ll personally participate in the entire process of a deer’s journey from the forest to the table, honestly facing the most original and poignant aspects of food; in a restaurant perched on a cliff, you’ll enjoy a meal written with ingredients within walking distance; and you’ll step into a long-established shark fin restaurant in Kesennuma, watching artisans preserve the proper shape of a shark fin with their hands, not machines.

From Tono to Kesennuma, a five-day, four-night field trip to the production area.

For five days and four nights, we started from the story-filled village of Tono, passing through Yamada, Ōtsuchi, and Ofunato, finally concluding in Kesennuma. Each stop was a field lesson about farm-to-table, and also a deep and intimate experience for a select few.

Tono "Kaze no Oka" Highway Rest Stop

The space is decorated with kappa legends and images of old houses. The local products hall displays seasonal fruits and vegetables, processed products and local wines from Tono, making it a starting point to taste the terroir of Iwate before entering Sanriku.
